Berry Lemonade

Ingredients:

  • 1 cup fresh berries (such as strawberries, raspberries, or blackberries)
  • 4-5 lemons
  • 1/2 cup sugar (adjust according to your taste)
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves (optional, for garnish)

Instructions:

  1. Wash the berries thoroughly and remove any stems or leaves. If you're using strawberries, you can slice them into smaller pieces.

  2. Juice the lemons to obtain approximately 1 cup of fresh lemon juice. You can use a lemon juicer or simply squeeze the lemons by hand. Make sure to remove any seeds.

  3. In a blender or food processor, combine the fresh berries and 1/4 cup of water. Blend until you have a smooth puree. If you prefer a chunkier texture, you can pulse the blender a few times instead of blending continuously.

  4. In a pitcher, combine the berry puree, fresh lemon juice, sugar, and remaining 3 3/4 cups of water. Stir well until the sugar is dissolved.

  5. Taste the mixture and adjust the sweetness or tartness by adding more sugar or lemon juice as desired.

  6. Fill glasses with ice cubes and pour the berry lemonade over the ice.

  7. Garnish with fresh mint leaves, if desired.

  8. Stir well before serving. Enjoy your refreshing berry lemonade!

Feel free to experiment with different types of berries or add additional ingredients like sparkling water or a splash of soda for some fizz. 

 

Watermelon Salad

Ingredients:

  • 4 cups cubed watermelon
  • 1 cup crumbled feta cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup black olives, pitted and sliced (optional)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon freshly squeezed lime juice
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the cubed watermelon, crumbled feta cheese, chopped mint leaves, sliced red onion, and black olives (if using). Toss gently to combine.

  2. In a small bowl, whisk together the extra-virgin olive oil and lime juice. Drizzle the dressing over the watermelon mixture.

  3. Season with salt and pepper to taste. Remember that feta cheese can be salty, so adjust the amount of salt accordingly.

  4. Toss the salad gently to coat all the ingredients with the dressing and ensure they are evenly combined.

  5. Let the salad sit for a few minutes to allow the flavors to meld together.

  6. Serve the watermelon salad chilled. You can garnish with extra mint leaves or a drizzle of balsamic reduction if desired.

This salad is perfect for summer gatherings or as a light and refreshing side dish. Enjoy!
